EASY PEASY KALE SALAD - FOR THE RELUCTANT COOK

Here's the deal.... I've literally grown the stuff in my herb garden, cooked with it in my soups and tried a few fancy things with KALE in stir fry's. We ALL know it is supposed to be good for you but I was yet to be fully convinced in the taste stakes. THAT was until I frequented my FAV hotel/pub in the world recently... "THE PADDINGTON INN". My fav hotel/pub? Well, it's where I actually met MR G if you really want to know!

Anyway, my son ordered the steak and it happened to come with KALE SALAD. Of course he didn't go near it, but just by looking at it I had to TRY. What a flavour sensation that was. I actually couldn't stop thinking about THAT SALAD over the next few days and set about trying to RE-CREATE the flavours from memory. 

What I created was awesome - of course - but I didn't quite hit the mark. So today I was brave enough to actually phone the Chef himself to see if he would part with his AMAZE recipe. What a sweetie, he did. I was a little bit off the mark but had SOME key elements in my own creation. 

I'm going to SHARE MY VERSION with you, purely because I really like my recipe. Give it a go and let me know what you think. I'll be trying "The Paddington Inn" version for myself in the next few days. So I will let you know how THAT goes soon. 

INGREDIENTS

SALAD:

Baby Kale - finely chopped
Continental Parsley - finely chopped
Lemon Rind - finely chopped
1/3 cup Chopped oven baked almonds
1/3 cup Parmesan Cheese



DRESSING:

Garlic clove - crushed
1/3 cup Olive Oil
1 lemon - Lemon Juice
1 Dollop of Dijon mustard
Salt



METHOD

STEP ONE: 

Finely chop equal amounts of Kale and Continental parsley in a bowl. 

STEP TWO:

Add lemon rind, parmesan and nuts to salad greens.

STEP THREE:

Dressing:
Combine crushed garlic, olive oil, salt, mustard and the juice of one large lemon. Whisk well until all ingredients are combined. 

STEP FOUR: 

Add dressing to salad and serve immediately.

ENJOY

This salad goes perfectly with steak, chicken or fish. The zingy flavour of the lemon will have your mouth watering for more.




WANT TO GET A LITTLE BIT FANCY?

* Toasted, crushed mixed nuts works well with this dish.
* Red onion finely chopped, adds another zing.

I hope you get to try this recipe as it is going to be a staple in OUR house for a while. The trick is to use a really good quality Olive Oil, heaps of salt (Sea Salt) and a very juicy lemon (you can squeeze and extra dash just before serving on top).
